Is there anything that easy to do that will give it a bit of a boost?

The usual I6 mods work well - the exhaust is a good place to start.
Depending on the age its amazing what a good service will do. Replace the plugs, leads, dizzy cap & rotor, and new air filter. Fresh oil and flushed cooling system. Give the carby some attention - can of carby cleaner down the throat or put a kit through it, or even replace it. Other than that, an aftermarket cam (unfortunately not quite as easy as the later model stuff), roller rockers, headwork, more compression, etc. Besides the engine, new set of gears in the diff whill help the engine.

The engine has been redone 10,000kms ago. The leads, dizzy etc are all new...
Oil and cooling are first priority. Carby wise I am not sure what is best... I got a 650cfm holley sitting here but thats a bit toooo big

You'd be amazed at how big a carby you can run on some engines. I fitted a 350 Holley on a 1600 Gemini, a 600 vac 2nd on a 250 Xflow, and saw a pair of 780 Holleys on a 265 Hemi in a Charger and did 13.7's 1/4 mile as run in street trim. And a mate has a modified Holley on a Centura with a 265 in it, the carby is around 730 CFM.

Was that a 2V cyl head???? I have a set of triple DHLA 45's on a slant six. And there was some guys in Melbourne that were running triple DHLA 52's on a 265 Hemi.

a bigger carby isnt allways better most times on a stock motor it will make it lazy, a stock 250 wouldnt warrent a 350. i have a calculation somewhere to work out the exact size carby and jet sizes depending on engine specs.

theres no need going further then 350cfm on a stock/mild 250.
extractors from ebay or wreckers. sport exhaust free flow air filter wheel alignment & balance. get it re-jet & re-graph the dissy during tune-up to tie things up. Thats all I'll would do unless you wanna go further.

Any tips for extractors? I would rather get a new set as the engine bay + engine is all nice and new

If you're after a budget brand, go for genie/wildcat. nice touch for what its worth.
No point going all out for the expensive brand when theres only 1/2 to 2 hp deference.
