I have the same car and had the same problem:

number 1, is the boot and the bottom of the steering column wearing out and it lets the engine noise into the cabin, thats why it goes up and down according to the engine revs

mate i had the same problem with my car for over a year untill the other day when i got my 2 front wheel bearings replaced, mine used to make lots of noise when turning at speed, but now theres next to no noise.

I'm a bit confused - how would that wearing out relate to the noise going up and down with revs? I can understand how. it might let noise into the cabin though.

Well I'm going with everyones idea on the fuel pump issue...should i get this checked out straight away do you think? I mean is there any fire danger etc?

not really any fire danger, just the chance of pump failure, but a bit of noise isn't too much of a concern, pumps can get very loud and still work ok.

The power steering pump runs off the belt on the front of your motor which speeds up as revs build therefor increasing the noise from the bearing/belt/pulley etc... The noise may be entering your cabin through the steering column hole iff the seals gone. With the fuel pump hissing im not sure without hearing it. Perhaps it makes noise when cold because it isnt rotating freely then quietens down when warm? Seems strange though when its a permanent magnet electric motor.
