possibly could be leaking internal? how much km on the car? take it and get a pressure test done. can you smell coolant after you drive it? imo its a high possibility that it is the headgasket

im guessing you had the head shaved and replaced gasket during rebuild? if so it shouldnt be headgasket

high possibility of aircon/heater using the water, although i dont know enough on that to comment, highly unlikely its the head though if it was reco'd that many k's ago

not necessarily, my head gasket went and i noticed no difference in the car, except coolant pissing out like a drink female, on the other hand it could be.

Get a test done at a Radiator Joint on your coolant bottle, it will tell if gases are getting into the coolant. Get a pressure test done at the same time.

As far as the AC using water, No, Excess water at this stage is more than likely from the high moisture content in the air.

Is there water/Coolant on the passenger floor? if there is then the heater core has gone.

Does the car have water or vapour coming out the exhaust after it is warmed up? Water vapour when cold will be normal.

Park the car on a dry area of conrete and then warm it up, while it is running check all round under the car and see if you can see some leaks.

Did you replace the hoses when you did the head? Check the heater tap as well.

How is you radiator cap, has it been replaced? If it is dodgey coolant will leak out under pressure.

...is it automatic? If so...check the fluid in the transmission if you can...lets just hope the transmission cooler in the radiator hasn't crapped itself mixing cooling water with ATX fluid :?

Also you mentioned hoses were changed...was everything tightened up properly? Were the hose clamps replaced with new ones for the main lower and upper hoses?

It might seep in slowly and sometimes not enough to get into the oil, instead just comes out as vapour through the exhaust...that sucks, head gasket done 40K km and already gone :?.
