if i was to shave 15 thous off the head would i have trouble with a stage 3 crow cam or a cam that has a high lobe,

10-15 thou is pretty much a std skim, so its not much.
and a high lift cam wont normally give you problems with shaving the head..

he is talking about cam lobe lift.. :)
a stroker has nothing to do with the cam or head.
a stroker kit is all bottom end as in crank,rods and piston height..

Shave 30 thou off and use an AU MLS gasket, which is 20thou (std is 40thou), so total is 50thou off, compression will be a touch under 10:1. Much more and you get issues with timing chain slack.
What cam are you looking at?
Wade and Camtech list some pretty decent grinds, and you can access all the specs online.
