replace your thermostat is a good idea. After that see if it still overheats.

Running with no thermostat is an old trick that allows full coolant flow, more in fact than when a normal thermostat is fully open. A slightly better test is to punch out the centre of the old one and test that. Then of course it is ruined. If the motor is run on LPG the converter may freeze.
The theory is that if the motor doesn't overheat with no thermostat fitted, the problem was the thermostat. In most circumstances however unless the thermostat is known to be not very old, skipping this test and just fitting a new one is typically advised. Testing with no thermostat may not tell you if there are problems with the rest of the cooling system. When a good thermostat is fitted if the engine doesn't run around 1/3 and move little under heavy driving, there is a problem or deficiency somewhere else in the system.
