because the raised sealing section of the gasket has been flatend from the first time it was fitted, same for the head bolts once used they have lost there strength and will not hold tension if used again...

Was the head done because of a blown gasket? If so water out the exhaust could be from when that blew. If the car was not blowing blue smoke before then it could be caused by hardened or incorrectly sized valve stem seals which can be replaced without removal of the head. If the mating surfaces on the block were cleaned up prior to the new head going on and new head bolts used and tensioned correctly then probably best looking at these points first.

If the blue smoke clears and returns after its been sitting then I would suspect the Valve Stem seals are leaking first. Does it blow a puff of smoke when lifting off the gas?

Does it blow a puff of smoke when lifting off the gas [no it does not do that. Only if you put you foot down to take off then stop when warm if you over take it will blow a little |

Head should have been skimmed before fitting and with the oil smoke it sounds like the valve stem seals are stuffed. Looks like its time for a reco. Troyman is right, you need to use a new head gasket as well as headbolts.
