Does anyone have some tips or a guideline for changing over the springs in my ED?

I'm getting Ultra Lows and my mate who put his Super Lows in recently just said take struts out, then diff, change them over and it's the same for the front minus the diff.

Methinks it's not as simple as that, or is it?

Also what tools would I need to complete the job? Just a basic Socket and Spanner set?

A metric spanner set, a 1/2" drive socket set, a spring compressor for the O.E front coils, and maybe a large shifter for the front radius rod nuts (if you go that way), will all help immensely. A ratchet spanner for the sway bar links might save you some curses, but it's not specifically required.

Mark the position of the top-hat relative to the shock body before you dismantle the strut, so when you reinstall the strut into the car the three top-hat bolts line up with the chassis holes.

Get a wheel alignment straight afterwards from a nearby aligner.

Some people change the upper arms on the rear suspension to improve the diff angle.

Rear:
Car up on stands.
Jack under diff (to hold it up when you pull shock out)
Undo lower shock bolt.
Undo upper shock bolt.
Drop shock out.
Old spring out.
New spring in.
Replace shock, do up upper shock bolt, jack diff up to the point just before it lifts car off stands (so suspension is at normal ride height), tighten lower shock bolt f**k tight.

Front, few different ways, this is how I do it.

Undo 3 upper strut bolts.
Under lower strut bolt.
Undo upper control arm bolts in engine bay.
Undo swaybar link at lower control arm.
Swing upper arm out, lever lower control arm down, get strut out.
Compress spring with spring compressor.
Undo top nut to release spring.
New spring in.
If ultralows, you probably won't need to compress new spring much if at all to get the strut top back on.
Reverse of that to get it all back in.
Think thats it.

Strictly you should loosen all the factory bushes and retighten them at the new ride height, I can never be f**k.
