I reckon you would have to keep taking the clearcoat off, to somewhere where it cant be seen, bit hard on a bonnet though,

me personlly i would just repaint and clear all the bonnet.
but thats just me if it was on my car

You shouldn't really do touchups like that on a metallic paint job, should always do the whole panel, as the panel will nearly always look blotchy.
However being as you have already done it, try this.
The sandy feeling is likely to be overspray of the new clearcoat. It should with some small effort polish off with some cutting compound. You will need to be very careful not to remove the original clearcoat, you will be able to tell if you have if you start getting colour onto the polishing cloth. unfortunately by then its going to be too late.
If you don't feel comfortable with it take it to a Panel beater or detailer for their opinion.
