If I want to upgrade from a standard EF dash cluster to one with the 4 dials, is there anything else I need to add???eg: oil sender???

The oil sender is only thr start, you need to talk to a good auto electrician

No just install it and it will work, as you mentioned the oil switch needs to be replaced with a sender for the oil pressure guage to work. The display dimming feature will not be in your car so you will need to add a resistor to the mid series cluster. You can swap the odometer readings over from your old cluster, this requires a TV repair place to swap the EEprom inside the cluster over. All this and more can be seen in the technical documents section.

You will only need to add the dimming resistor if it is a fairmont Cluster. If you get an XR6/8 cluster, you wont have to worry about it.
If you put in an XR or chaser Cluster, all you will need to do is swap the oil pressure switch for a sender
