That steering Wheel is a Momo olympus 2000 steering wheel with an XR Cruise control steering pad on it. The steering wheel itself can be purchaced off ebay for a total of $410

I believe that the above mentioned steering wheel is a genuine ford Momo Steering wheel that where an option on EB GT. I have only seen one on ebay, and i would love one in my EB Ghia.
