When upgrading the dash in an el to a "sports" model (added battery voltage and Oil pressure gauges), where is the best place to source the required oil sender?

$100?? they must have gone up in price. i paid $50 for mine at thomson ford in parra. then again was over a year ago

They're now around $60 and as above, $20 second hand.
Yes that's all you require to upgrade to a 'mid' series. But if you purchase a Fairmont cluster, you'll need to undo it and solder a resistor to the circuit board.
