need to find out if the american trickflow/ edelbrock intake manifold can be reversed to suit ef xr8

Yes but the TFS is more troublesome than the edelbrock.

is it just as simple as swapping the plenum the other way?

Not worth the effort just to have it the right way around.. You'll have to move airbox and MAF to other side. New throttle body and cruise control cable? Then for tb, it would be easier to buy one from states to suit that side etc
