If you REALLY want a V8 - go for it.

However, a worked 6 will be better than a stock 165 motor. (and cheaper)

I was contemplating putting a 5L in my fairy when I killed the stocky 4L in it, but ended up putting in an XR6 motor for a fraction of the price, and I rekon it goes better than my XR8 did when it was stock.

I've converted an XG outback pack ute to 5.0L previously. It went well.
However if I was doing it myself I would fit a 351w EFI engine. Much more torque and much more potential down the track too. If you can find a cheap F-series 5.8 EFI engine it will give you most of what you need except the intake which is too high(although you may not care if it hangs out the bonnet?:).
Because you have an XG you can just modfiy the original six cyl harness to work on the V8 and the Speed density F-series EECIV will basically plug straight in. If you want to modify the engine down the track you can add a couple more wires for a Mass Air conversion which will allow the use of a 5.0L MAF EECIV and will handle any mods you care to throw at it.
If you can't find a 2nd hand F-series engine just buy yourself any 351w engine and add an Edelbrock 5.8 EFI intake and an Accel 5.8 TFI-IV distributor. Use all the sensors off your original six cyl.
You'll need X series V8 frame and engine mounts and some Pacemaker XR-Y type 1 5/8" tri-Y headers. You'll also need to "massage" your heater pipes to clear the left head/rocker cover.

Cheers,
Pete.
