If I put ute diff into a wagon will it make any difference to the top an speed i know it should be a quicker of the line.

Most wagons and utes are 3.23:1 (or 3.28:1). I guess the XR6 ute may have had 3.45?
That will make it quicker off the line, but higher RPM at 100km/h, |

I looked into this for my BA/BF. I found the XR Ute had the same ratio as the wagon (i.e. 3.23).
Apparently working out the ratio is an easy check to perform just by looking at the number on the diff housing. My mechanic took literally 20 secnds comparing my original wagon to a BA XR6. So no gains to be had there for me unfortunatley. Not too sure what it was like in the AU days though.
