I have an EF Fairmonty I6 and it seems to want to keep pumping fuel into the cylinders. I changed the injectors and then put new plugs in. It will start on gas, but if i try to change it to petrol, it just dies. The old plugs were soaking wet, so i assume it is flooding. Does anyone know what causes one of these to flood and how to fix it?

You can try flooring the accelerator when you start it, that should cut off the injectors at least while its cranking. Worth a try.

Have you tried isolating the injectors. Have you tried disconnecting the injectors and start it on gas? Maybe the fuel injectors aren't switching off when on gas causing it to flood. What does it idle like?

I'm not sure how to isolate the injectors. Do you mean by disonnecting each one? Or is there an easier way? I have got it to start on gas a couple of times and it idled fine once it started, but as soon as i switched it back to petrol it dies
