To my au1 1 tonne ute I have fitted a complete new (unused) explorer 5l engine gt40p heads , cam used in the EL gt program, 1.72 street terra bolt on roller rockers, newtickford extracs/cats and 2 1/2 inch system, wide mouth cold air intake snorkel and K&N high flow airfilter, I have used the MAF and standard throttle body off the original 175 kw motor, would a 70mm or 75mm throttle body make a noticable difference, if so would I also need to change the MAF and adapter plate :?:

What MAF and t-body do you have now?
A 70mm t-body is as large as i would go. 75mm will actually reduce performance.
If your MAF is a 70mm already I would leave that in place.

Std is 65mm.
If it's a std Explorer engine and intake it will be a 65mm t-body. To measure it, ideally you would remove it and measure the back side because the front side tapers out to a larger diameter. There is no advantage to have a 70mm over a 65mm.
The MAF has some numbers on the sensor. If your's is a 70(it should be on an AU) it will have AFH-70 on it.
