Best bit would be contact an insurer like Shannons , Lumleys or Ryno and find out who they use as their valuers.
They should have a list of contact details for them in your state.

Things you need to know to put a value on the car are,
1) Build number.
2) Is the car still matching numbers, ie engine number.
3) Capacity, 351 or 302.
4) Current Km.
5) Any other factory options, ie sunroof.
6) Originality of the car.
7) Current condition, interior and exterior.
8) Transmission.
