My air only works at low speeds up to 40kph. If the car goes up to hiway speeds the a/c stops working.
What do I check first please?

I believe that the air conditioning will not work at throttle percentages over 85%, and it's designed that way to aid acceleration.

The a/c people suggest the evaporator is icing up and forming a solid block. Short of pulling the dash apart they suggest turning the a/c off for a while until the ice melts. Otherwise a new evaporator thermostat is required..... Does this sound reasonable?

So put your Climate control in diagnostic mode and look at evaporator temp in real time to see if that's the case.

Thank you for that link, I had no idea of its existence.
Have performed all the tests and no errors were logged. Just one point...the evaporator temp reads around 16 - 17 degrees...Is this about right, and does this temperature fluctuate?

Depends on what temp you've set. That's not low enough, needs to be down to around 5°c.
If the compressor is engaged continuously for your figures, you're most likely low on gas charge.
