The colder it is the higher the oil pressure should be. But it sounds like a dodgy sensor. Cold shouldn't affect the pressure that much.

My EL does that. In the cold the oil pressure is higher than normal...midway to 3/4. Once all warmed up, at idle it drops to the first line and increases in pressure with acceleration. At cruising speed it's about 1/3 the way up the gauge. Always thought that was normal!

If memory serves, oil pressure should be greater than 300kPa @ 2000rpm when at normal operating temperature.
My EB with 242,000km does just over 100kPa at idle when warm. The sender is probably stuffed. Check with a test gauge before proceeding. The sender is on the LHS of the engine near the oil filter. If you do replace the sender, make sure you get the one for the gauge, not the switch as they are different.

Oil sender is under the intake manifold up above the engine mount.. you can get to it from under the car. Get a cheapie mechanical oil pressure gauge (seen them for 10 bucks on gumtree) and put it in the engine bay... don't bother fully installing it.. it's a guage, some clear thin tube and a fitting. Fitting goes where sender was.. hose goes between fitting and sender.. don't worry about the backlight wiring..  then run and see what pressure you are getting.
