So I don't have any dash lights, park lights both front and back. I swapped all the bulbs over, tested the fuses and swapped a few relays with no success. My brake lights and headlights work but that is it. I also swapped the headlight combination switch over also with no difference.

Does anyone please know why I don't have the park lights and dash lights?

I dont know about an AU but on an EL the parking & dash light are fed their own contacts in the light switch to a relay, I suggest you start at the lighting switch

do you hear the tail relay operate in inside fuse box when park is turned on ?
check/replace fuse 15 in inside fuse box ..
replace tail relay
remove tail relay in inside fuse box/smaller black one towards left side and bridge CONTACT circuits with wire and check tail lights stay on
check for power and earth across relay pull in winding's with switch on with test light
