I recently revived an xh falcon Longreach with a transmission switch and new fuel pump and have just noticed some issues with it revving unnecessarily. It's hunting through the rev range, sometimes it's revs 2000rpm at idle for a minute or so then drops down or goes back up again. Any information or advice would be appreciated as to how to resolve this issue.

Check the idler screw on the TB, adjust and see if it resolves the issue.
ISC could also be gunked up, its located on the TB as well. Does it surge without touching the accelerator or does it rev hang after touching the accelerator? You swapped a manual with a manual right, not auto to manual conversion.

Manual to manual. Throttle bodys good, it does seem to 'rev hang' after touching the accelerator.

Already reconnected the hoses to actuate the heater valve but that has only partially solved the problem.

That will only cause a leak when you have your heater on hot, there's no vacuum in that line otherwise but good work. Checked your brake booster line, PCV lines, canister purge lines, intake manifold gasket. Check all the things! If you get some carby cleaner and spray it around suspect areas while engine running you should hear the engine rev up when you hit a leak. But as SWC has said, probably best to check/clean the ISC and reset base idle first.
