Okay guys you are now preaching to the uneducated about metal head gaskets.
I have scored an EA to ED two plate metal head gasket with what looks like a brown copper coloured coating, there is no seal between the plates at the piston cutouts and the surfaces are pressed/raised. Is there any special preparation sealant required before fitting the gasket? Can they be reused again? Any more info would be appreciated

Also haven't needed to or heard of anyone putting any kind of gasket sealant on a headgasket. They usually have a sealant in strategic spots already on them. Did it come with any instructions?

with metal head gaskets you don't use sealant, the metal is usually a copper based material so its soft enough to compress when tightening down the head. talk to a engine builder for toque settings.
personally i wouldn't use a copper head gasket as i have been told that electrolosis can occur, therefore welding the head to to the block.
