Do something custom to it... everyone seems to be just putting ghia parts on to change their interiors.

what about simple things that don't cost much, like colour coded mirrors, rear courtesy light mounted in the back of the centre console, carpeted kick panels (EF futura was plain plastic, EF fairmont models and up had carpeted kick panels), chrome door handles, alloy wheels, chrome exhaust tip(s), leather steering wheel, or automatic climate control.

Yes, carpeted kick panels, all EF/EL Fairmont/Ghia/Fairlane/LTD models had carpeted covered kick panels. What they do is help to blend the normal plain plastic kick panels into the carpet, makes the footwells more attractive. I will be doing this next week to a mate's GLi wagon, courtesy of that guy on eBay who's wrecking an NF fairlane in queensland, with parts starting from $1.
