i would say you have a stuffed clutch fan(not locking in under load).
it might seem ok.. but under high revs it might not be sucking enough air through the radiator..

otherwise try a cooler thermostat

As long as you're moving the clutch fan isn't needed. I've been driving for months without mine and my temp is fine. Have even driven into the city and it was fine.
