I'd like to fit EF front and possibly rear door trims to my ED - can anyone tell me if they fit and what needs to be done?

yes.
only the door handle metal rod can have issues, not difficult.

- so the basic shape is correct?

- what about the openings for manual window winder handles - do they line up? (or is it a given to go to electric windows).

- door handle metal rod: that's the one that hooks thru the door release lever? - just a matter of bending it, or do I fit the EF one?

yep, physically it'll screw straight on.
if you use GLi door trims and you've got manual windows, it'll go straight on, holes will line up.

you CANNOT use power window door trims would manual winders, not even if you cut the hole.
so just keep that in mind.
