Thermostat
Radiator
split hose (mabye?)
cooling system needs to be flushed.

There are some idea's off the top of my head.

Thermostat is the easiest to replace if that's the problem.

Sounds like sensor isa rooted or wire has come off sensor. Check these first. Also use a k-probe on a multimeter and confirm it is running hot, before replacing thermostat/rad etc

So as soon as you turn the car on, the temp gauge is on max? even if its dead cold? If so then its def a sensor problem.

temp sensor becomes very brittle with age and wires break. this will make the guage go straight up.

after reading a second time, I'll say sensor too. In your Fuel Gauge problem you say you've had an accident, and you've just finished repairing it.... it's possible that the accident or whilst repairing the car has damaged a set of wire's going to the 2 gauges... Just a thought.
