I know its a simple question but did you align the clutch plate correctly?
Simple but can also cause a heavy pedal if not aligned correctly.

I've got a heavy clutch, way heavier than my mates EF 5 spd which is meant to have an upgraded clutch, and mine also shudders in reverse when you let the clutch out.
Also you have to have your foot to the floor to change gears, especially if you want to find 1st.

New clutch/cable or what?

Check the bush on the clutch fork. Sometimes the centre of it pulls back but stops at a pin to stop it coming out all together. You will lose some travel when this bush fails.

Hey mate just thought i'd let u know that the falcon manual boxes wear the throw-out bearing seat on the front of the box and that too causes the clutch pedal to be hard as well as putting uneven pressure on your pressure plate.

just wondering how long it takes to properly install a pedal box in an 99 AU falcon. i've been told by 'experts' approx. 10hrs work! is this correct or are they having me on??
