Is there a difference in the headlamp switch on the dash between low and higher series EF models? Particularly in relation to that little side switch that dims the dash lights, am I right in that the base model one has 3 positions - low dim, normal and normal with interior lights on, where the higher series models the switch is fully adjustable for the brightness of the dash lights?

AFAIK the dimmer is the only difference in the headlight switch. In my EF Fairmont it has a fully adjustable dimmer, and it adjusts all the dash lighting. In my dad's EF XR6, it only has 2 options, low dim, or normal which is set in the middle and of course the top setting for the interior lights. So yes id say your right on the money twr7cx, base model falcons (possibly including all the XR range as well) got the preset position dimmer whereas Fairmont, Fairmont Ghia, Fairlane/LTD got the adjustable one.

u also need the high series bcm (green) for the fairmont switch to work

Visually, the high series switch has a green connector, the low series has a beige coloured one.

I think its the same type of connector. The front switch you can have as low series you just need to change the backside of it as mentioned above to the green one to get the dimmer function and also the BEM.
But then wont you need to change the dash loom also? Unless you want to add in extra wires to the loom which equals more effort and hassle.

As above,
but don't think the switch does the dimming, its just 2 n/o contacts that trigger the bem to 'dim up or down.

Reason I'm asking is that I am completely rewiring my car using an NF Fairlane Ghia wiring loom, but I only have a low series headlamp switch at the moment.

It shouldn't be too hard to source a headlight switch from a Fairmont. Even one out of a Boxcar fairmont will work.
