On top of what you have said

a) get a falcon, as it will be cheaper and fairmont's don't come in manual.
b) Get adjustable shocks for the front, good shocks for the back and springs made up that are atleast 150% normal spring rate, yet only around 50mm lower than stock. With swaybars get stiffest off the shelf item (any stiffer and without chassis modification you will get excess flex).
c) Every last bit of sound proofing gone, this weighs over 10kg!
d) scrap the stock dash and make one up out of sheet metal
e) just get rid of the a/c altogether
f) there's another thread on here somewhere very similar, have a look for it.

nice. get a big cam and if you really want to do it right, valve springs.
a large dump pipe of some description to make sure the exhaust isnt restricting and will also be a few kilos off there.

big a** sway bars are a MUST! maybe adjustable ones too if money allows.

this new J3 chip is probably worth a look for cheap power too. esp if you put in a big cam

can you change the diff ratio? If so go 4.11's or (or 3.9's atleast), this will make a HUGE difference behind the auto.

What kinda track/events are you doing? If its anything like hillclimbs etc get tranny coolers....as many as you can fit...

I haven't used an auto for racing before as we needed manual for control (street sedans class on dirt), but I'm sure you will find heat issues if you don't put some coolers in.
