In second gear I can stall till 2500-3000 but it won't launch it's like it dies then comes to life again 3500-4000

That's launching in second? I get it all the time just under acceleration. Did some digging, apparently it's the BBM? Word on the street is you can get rid of it, losing a lot of torque but gaining a lot more power in the top end, while also removing any flat spots in the rev range.

Do you still get it if you put it in first and stall then drive in manual mode cause some cars just in drive will always stay in second they won't go to first unless you put it there

Doesn't matter if launched in first or second. The flat spot occurs @ 3500-4000rpm in 2nd and 3rd.
If you want the car to go into first gear automatically when you stop, be in 3rd. It will flick it down to first when you come to stand still. If you leave it in second, it will stay there. You shouldn't really be launching in second gear (not sure why, was just told by one of the mechanics at work that second gear hard launching isn't the best on the gearbox). I'm sure if you're only doing it for drags then it probably won't be an issue as you wouldn't be doing it that often. If I'm just cruising around, I'll take off gradually with second as it does help save on fuel. The best way to feel the flat spot I've found, is drive @ 60-70 in 3rd and then just stand on it. It will rev up to 3000 ish, and then drop 500-600rpm and rev up again. Sorta feels like it's just chugging after that drop, and then it takes off. Not entirely sure why it does it, but I know it's freaking annoying when trying to get past something without kicking down a gear.

If I launch in first then change into second it comes back down to 4000rpm so skips my flat spots but it was so slow in second launch felt like it was go na conk out

Usually not if I rev it out till 6200 it skips and stays around 4000
