but from what i have read on here you can buy adapters for like $30 (for 4 or each?) or something like that you can buy something so the offset(?) is fine

Do you still have the factory wheels? Are they spoken for? If the answer to those questions (man, this is starting to sound like a commercial, lol) is yes and no, how much would you be willing to part with them for?
edit: Was in The Tyre Factory down just past Carousel today and they had some 16" rims in a similar style to the EL XR6 stockers. Several of the catalogues they had on display had numerous styles available in 16" as well.
